WHO AM I?

I spent my entire childhood in northern Aveyron. Nature was my playground. I tasted the very best: brambleberries picked in the hot sun at the start of the Indian summer, hazelnuts still green in their shells that I cracked open with a stone… I had the joy of sharing some wonderful days with my grandparents. Stays full of daydreams, where well-being depended on their constant attention, their smiles, their kind words and their sweet treats.

The house was filled with serenity. Privileged moments where time had no hold. Simply happiness! Auprès d’Angèle is a dream that I’m making come true by giving substance to what built me up, a place, an atmosphere. Auprès d’Angèle is a tribute to granny, to both of us, to all grannies.

Near Le Cruou, the house I’ve put into ‘work’ blends in with the welcome I received as a child.

At Mémé's, at any hour of the day or night, in the fridge or in a few cupboards lined with jars, she knew how to cook with very little to bring us together around her table.

THE TABLE

I had a fascination for mothers, my grandmothers in particular, who could conjure up exceptional moments of indulgence with a little leftover food. I have fond memories of the table parties that brought young and old together, bringing the whole family together around generous slices of bread and tasty dishes…

Our region is enamelled with a multitude of facets, recipes that draw their source, their substance, from their nourishing ‘mother’.

At the market, observe, smell, touch, discover, crunch… on the way back, imagine, evoke, project, salivate already… in the kitchen, peel, hull, scale… then brown, grill, season, slice… and finally, assemble, flower. Guillem will be responsible for the savoury dishes and Zoé for the sweet.

The table setting is concise, accompanied by the ‘Liadou’ that Nicolas has developed for us.

To accompany the dishes, the wines of Aveyron will take pride of place. The vineyards of Marcillac-Vallon, steeped in history, will be given pride of place. The Causse Comtal, Rougier de Marcillac and Ségala de Conques regions will also be in the spotlight.
There will also be a nod to the vineyards of the Côtes de Millau, Entraygues and Estaing. Along the Aveyron, you’ll also discover a number of producers offering a few rarities.

GOOD NIGHT

Ah, picking flowers in the garden! The bouquet of roses, the bowl of forget-me-nots and the scent of lilac have made me aware of the virtues of flowers.

I want to entertain as if I were at home. Take the staircase, which is the heart and soul of this sandstone house, and you’ll discover the dwelling.
The rooms have a home-from-home feel, with an intimate, soothing and elegant atmosphere. Introduced to fine linen by my mother, I took particular care with the bathroom linen, as well as the cotton satin bed linen…

A real place where people can share, where energy and life reign!
